Alex’s Calming Chamomile Tea

Every year I grow chamomile daisies in my garden in Suffolk, and the flowers have been just brilliant this summer! Savour a moment of calm with my soothing recipe for Chamomile Tea.

1. You’ll need around 3 - 4 tablespoons of fresh chamomile flowers (dried can work just as well but the taste is a touch earthier!)

2. Pop the heads of the chamomile daisies off their stems - it’s just the flowers you want for tea, not the stems or leaves!

3. Add the chamomile flowerheads to a sauce pan with a sprig of fresh mint, and pour over around 250ml of cold water.

4. Gently bring your infusion to the boil - once it’s bubbling, take it off the heat and allow it to steep for 5 minutes.

5. Strain your chamomile tea through a sieve to remove all the bits, into your favourite cup…and you can always add a dash of honey to taste!
